Ingredients

Scale

Filling Ingredients

  • 2 medium tart yet sweet apples (such as Granny Smith or Honeycrisp), peeled, cored, and finely diced
  • 2 tablespoons granulated white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon melted butter

Assembly Ingredients

  • 810 egg roll wrappers
  • Water or egg wash, for sealing

Frying and Coating

  • Vegetable or canola oil, for frying (enough for deep frying, about 2-3 inches in pan)
  • 1/4 cup cinnamon sugar (a mixture of ground cinnamon and granulated sugar), for coating

Instructions

  1. Prepare the Apple Filling: Peel, core, and finely dice the apples into small cubes. In a skillet over medium heat, melt the butter, then add the diced apples, sugar, cinnamon, and lemon juice. Cook, stirring occasionally, until the apples soften slightly and the mixture thickens, about 5 to 7 minutes. Remove from heat and set aside to cool.
  2. Assemble the Egg Rolls: Lay one egg roll wrapper flat on a clean surface in a diamond shape. Spoon a generous tablespoon of the cooled apple filling onto the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in both side corners toward the center. Roll tightly upward and brush a small amount of water or egg wash on the top corner to seal the egg roll securely.
  3. Fry Until Golden: Heat oil in a deep skillet or frying pan to approximately 350°F (175°C). Carefully add the egg rolls in batches and fry them until golden brown and crispy on all sides, about 2-3 minutes per batch. Remove and drain on paper towels to remove excess oil.
  4. Coat with Cinnamon Sugar: While the egg rolls are still warm, roll them generously in cinnamon sugar. The warmth helps the coating stick to the crispy surface, adding a sweet, spiced crunch.

Notes

  • Use dry apples: finely dicing apples helps them cook evenly and keeps the filling from being watery.
  • Don’t overfill: use a moderate amount of filling to prevent bursting while frying.
  • Maintain oil temperature at around 350°F for even cooking and crispiness.
  • Drain egg rolls well on paper towels to retain their crunch.
  • Keep egg roll wrappers covered with a damp cloth while assembling to prevent drying out.
