Ingredients

Scale

Main Ingredients

  • 2 ripe bananas
  • 1 cup all-purpose flour (or gluten-free flour as a substitute)
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup milk (dairy or nondairy)
  • 1 teaspoon vanilla extract
  • Butter or oil, for cooking

Optional Ingredients

  • 1/2 teaspoon cinnamon
  • Mini chocolate chips (optional)
  • Nut butter (peanut, almond, or cashew) for mixing or dipping
  • Blueberries or chopped nuts (optional)

Instructions

  1. Mash the Bananas: Peel and mash two ripe bananas in a bowl until smooth with a few small lumps remaining to add texture.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and vanilla extract until well combined. Add the mashed bananas and mix until fully blended.
  3. Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, and cinnamon if using, to ensure even distribution and fluffiness.
  4. Gently Fold Wet and Dry: Pour the dry ingredients into the wet mixture and gently fold together with a spatula until just combined. Avoid overmixing to keep pancakes tender.
  5. Cook the Dippers: Heat a non-stick skillet or griddle over medium heat and add a little butter or oil. Using a tablespoon or small cookie scoop, drop dollops of batter onto the pan. Cook for 2-3 minutes on each side or until golden brown and cooked through.
  6. Serve Warm: Transfer the cooked dippers to a plate and serve immediately with your favorite dips like maple syrup, honey, or nut butter.

Notes

  • Use ripe bananas for the best natural sweetness and moisture.
  • Don’t overmix batter; a few lumps are good for texture.
  • Use a small scoop to ensure even-sized dippers for consistent cooking.
  • Cook on medium heat to avoid burning and ensure inside is cooked.
  • Keep cooked dippers warm in a low oven if preparing large batches.
