Ingredients

Scale

Chicken and Skewers

  • 1 lb skinless, boneless chicken breast, cut into 1 to 1.5 inch bite-sized pieces
  • 810 bamboo skewers, soaked in water for at least 30 minutes

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • 1/2 tsp garlic powder
  • 1 tbsp fresh lime juice

Seasonings and Garnishes

  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup chopped green onions
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Prepare the Chicken: Cut chicken breast into evenly sized 1 to 1.5 inch pieces. Season lightly with salt, pepper, and a pinch of garlic powder to enhance flavor.
  2. Soak and Thread Skewers: Soak bamboo skewers in water for at least 30 minutes to prevent burning. Thread the chicken pieces evenly on each skewer, leaving small gaps for heat circulation.
  3. Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice until smooth. Taste and adjust sweetness or heat as desired.
  4. Cook the Skewers: Grill, broil, or cook in a hot skillet for 8-10 minutes, turning halfway to ensure even browning. Chicken should be cooked through with slightly charred edges.
  5. Toss with Sauce and Garnish: Gently toss hot chicken skewers in the prepared sauce without breaking the meat. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Cut chicken into uniform pieces for even cooking and juiciness.
  • Do not overcrowd skewers; leave space between pieces for better grilling.
  • Adjust sauce thickness with a splash of water or lime juice if desired.
  • Optionally marinate chicken in lime juice and seasoning for 15 minutes before cooking for extra flavor.
  • Use an indoor grill pan on rainy days for similar charring results.
  • Store sauce separately from chicken skewers for better texture when reheating.
