Ingredients

Main Ingredients

  • Fresh salmon fillets (skinless, firm) – about 1 lb
  • All-purpose flour – 1/2 cup
  • Eggs – 2, beaten
  • Panko breadcrumbs – 1 cup
  • Garlic powder – 1 tsp (divided)
  • Salt and pepper – to taste
  • Vegetable oil – for frying, about 1-2 cups

Bang Bang Sauce

  • Mayonnaise – 1/2 cup
  • Sriracha or hot sauce – 2 tbsp (adjust to taste)
  • Honey (or sugar) – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt – a pinch

Instructions

  1. Prepare the Salmon: Cut fresh salmon fillets into bite-sized cubes, making sure they are roughly the same size for even cooking.
  2. Set Up the Coating Station: Prepare three bowls: one with all-purpose flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder and a pinch of salt.
  3. Coat the Salmon: Dip each salmon cube first in the flour, then in the egg, and finally coat it thoroughly with the panko breadcrumb mixture, pressing lightly to ensure it sticks well.
  4. Fry Until Golden: Heat vegetable oil in a deep pan to medium-high heat. Fry the coated salmon bites in batches for about 2-3 minutes per side until golden brown and cooked through. Remove and drain on paper towels to remove excess oil.
  5. Prepare the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sriracha, honey, lemon juice, and a pinch of salt until smooth and creamy. Adjust sweetness and spiciness to your preference.
  6. Toss and Serve: Gently toss the crispy salmon bites in the Bang Bang sauce or serve the sauce on the side for dipping. Garnish with chopped green onions or cilantro if desired and enjoy immediately for best crispiness.

Notes

  • Use fresh salmon for best flavor and texture.
  • Fry in small batches to keep oil temperature consistent and bites crispy.
  • Drain bites well on paper towels to remove excess oil.
  • Adjust honey and sriracha to balance sweetness and heat to your taste.
  • Serve immediately to preserve the crispy coating.
  • For gluten-free version, substitute panko and flour with gluten-free options like crushed nuts or rice flakes.
  • Baking is a healthier alternative: spray coated bites lightly with oil and bake at 400°F (200°C) until crispy.
