Ingredients

Scale

Beef Steak

  • 1 lb tender beef steak (sirloin or ribeye), trimmed and sliced

Pasta

  • 8 oz pasta (penne, fettuccine, or spaghetti)

Aromatics & Herbs

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp fresh herbs (basil, parsley, or thyme), chopped

Sauces & Dairy

  • 1 cup fresh diced tomatoes or ½ cup cream
  • ¼ cup grated Parmesan cheese

Seasoning

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preparing the Beef Steak: Pat the beef steak dry and season generously with salt and pepper. Allow the steak to come to room temperature. Heat olive oil in a skillet over medium-high heat and sear the steak for 3 to 4 minutes per side, depending on thickness and desired doneness. Remove the steak and let it rest before slicing thinly against the grain.
  2. Cooking the Pasta: While the steak rests, bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve one cup of pasta cooking water, then drain the pasta.
  3. Sautéing Aromatics and Making the Sauce: In the same skillet used for the steak, add a little more olive oil if needed. Sauté minced garlic and chopped onions until fragrant and translucent. Add your chosen sauce base—fresh diced tomatoes or cream—and simmer gently for 5 to 7 minutes to develop flavor.
  4. Combining Steak and Pasta: Return the sliced steak to the skillet with the sauce. Add the cooked pasta and toss everything together, adding reserved pasta water gradually to achieve a smooth sauce consistency. Finish by stirring in fresh herbs and sprinkling Parmesan cheese over the top before serving.

Notes

  • Let the steak rest to retain juices and flavor.
  • Use reserved pasta water to create a smoother, better-bound sauce.
  • Do not overcrowd the pan when searing steak to ensure a perfect crust.
  • Add fresh herbs at the end to preserve their bright aroma and taste.
  • Slice the steak against the grain for tender bites.
