Ingredients

Beef Steak

  • Ribeye, sirloin, or flank steak – 1 lb (450g), tender cuts

Pasta

  • Fettuccine, penne, or spaghetti – 8 oz (225g)

Oils and Aromatics

  • Extra virgin olive oil – 2 tbsp
  • Garlic – 3 cloves, minced
  • Onion – 1 medium, chopped

Herbs

  • Fresh basil, parsley, or thyme – 2 tbsp chopped, as preferred

Sauces

  • Tomato-based sauce or cream-based sauce – 1 cup (240ml), choose per your taste

Cheese & Seasonings

  • Parmesan cheese – 1/4 cup (25g), freshly grated
  • Salt – to taste
  • Freshly ground black pepper – to taste

Instructions

  1. Prepare and Season the Steak: Bring your steak to room temperature. Generously season both sides with salt and freshly ground black pepper. This ensures even cooking and locks in flavors during searing.
  2. Cook the Pasta: Boil a large pot of salted water. Cook your chosen pasta until al dente according to package instructions. Reserve about 1/2 cup of pasta water before draining for later use.
  3. Sear the Steak: Heat olive oil in a heavy skillet over medium-high heat until shimmering. Add the steak and sear each side for 3-5 minutes, depending on thickness and preferred doneness. Remove the steak and let it rest while preparing the sauce.
  4. Make the Sauce: In the same skillet, add chopped garlic and onions. Sauté until fragrant and translucent. Stir in your choice of tomato or cream-based sauce, along with any additional herbs or vegetables as desired. Let the sauce simmer gently to develop flavor.
  5. Combine Steak and Pasta: Slice the rested steak thinly against the grain. Toss the cooked pasta into the sauce, adding reserved pasta water as needed to reach desired consistency. Fold in the sliced steak so every bite has balanced beef and pasta.
  6. Garnish and Serve: Sprinkle with freshly grated Parmesan cheese and chopped fresh herbs before serving to enhance flavor and presentation.

  • Rest your steak after cooking to redistribute juices and keep it tender.
