Berry Barks are an easy-to-make, customizable treat combining vibrant fresh or frozen mixed berries with a smooth chocolate or creamy yogurt base.   • Mixed berries (fresh or frozen) – strawberries, blueberries, raspberries, blackberries, quantity as desired (approx. 2 cups)
  • Chocolate or yogurt base – 8 oz dark, milk, white chocolate, or 1 cup yogurt
  • Vanilla extract – 1 tsp

Optional Ingredients

  • Sweetener (if using yogurt) – 1-2 tbsp honey, maple syrup, or agave
  • Nuts and seeds – 1/4 cup almonds, pistachios, chia seeds, or preferred nuts/seeds
  • Additional toppings – shredded coconut, edible flowers, cinnamon or chili powder (pinch), caramel or peanut butter drizzle

Instructions

  1. Prepare Your Base: Melt your choice of chocolate gently in a microwave or double boiler, stirring frequently until smooth. If using yogurt, whisk it together with your preferred sweetener and vanilla extract until creamy.
  2. Arrange the Berries: Wash and dry your berries thoroughly. Chop larger berries like strawberries into bite-sized pieces and spread them evenly over a parchment-lined baking sheet.
  3. Pour the Base Over the Berries: Carefully pour the melted chocolate or prepared yogurt over the berries, spreading it with a spatula to create an even layer. Some berries peeking through create a rustic look, so perfect coverage is not required.
  4. Add Toppings: Sprinkle nuts, seeds, or any additional toppings such as shredded coconut or edible flowers over the base for added texture and visual appeal.
  5. Chill Until Firm: Place the baking sheet in the refrigerator or freezer for 30-60 minutes, or until the bark is solid and easy to break apart.
  6. Break and Serve: Remove from the fridge and break the bark into irregular pieces using your hands or a knife. Serve immediately or store for later enjoyment.
