Customizable to fit dietary needs, Berry Trifle Cups combine a balance of sweet, tart, and creamy textures in every bite.

Ingredients

Scale

Fresh Fruit

  • 1½ cups fresh berries (strawberries, blueberries, raspberries, or blackberries), washed and sliced if needed

Creamy Layers

  • 1 cup whipped cream (regular or coconut whipped cream for dairy-free)
  • 1 cup vanilla pudding or custard

Cake

  • 2 cups sponge cake or pound cake, cut into 1-inch cubes (gluten-free cake or crumble cookies as substitute)

Optional Sweeteners and Garnishes

  • 1 tbsp honey, maple syrup, or powdered sugar (optional, for lightly sweetening berries or cream)
  • Fresh mint leaves for garnish

Instructions

  1. Prepare the Berries: Wash the berries thoroughly, pat them dry, and slice larger berries such as strawberries into bite-sized pieces. Optionally, toss the berries with a little sweetener like honey or powdered sugar and let them macerate for 10–15 minutes to enhance sweetness.
  2. Cube the Cake: Cut your sponge or pound cake into approximately 1-inch cubes. This size allows the cake to soak up berry juices without becoming mushy while maintaining a satisfying texture.
  3. Assemble the Layers: Begin by spooning a layer of cake cubes into the bottom of clear cups or jars. Add a layer of the prepared berries next, followed by a generous spoonful of whipped cream or vanilla pudding. Repeat these layers until you fill the cup, finishing with a fluffy cream layer on top.
  4. Chill and Garnish: Refrigerate the assembled Berry Trifle Cups for at least 30 minutes to allow flavors to meld and layers to set. Just before serving, garnish each cup with fresh mint leaves or a few whole berries for a fresh, elegant touch.

Notes

  • Use fresh, ripe berries for the best flavor and natural sweetness.
  • Avoid over-soaking the cake to keep it from becoming soggy; assemble the cups promptly.
  • Chilling intensifies the flavors and helps layers set for a better presentation.
  • Whip the cream to soft peaks for ideal texture that holds shape but remains light.
  • Layer carefully in clear cups to showcase the beautiful colors and textures.
