Instructions

  1. Prepare the Ingredients: Cook the rice according to package instructions and steam the broccoli until just tender. Cook and shred the chicken if not already prepared. Finely chop the onion and garlic for sautéing.
  2. Make the Creamy Sauce: In a large skillet, sauté onions and garlic over medium heat until fragrant and translucent. Stir in the cream of mushroom or chicken soup and milk, warming the mixture gently. Season with salt, pepper, and paprika or thyme to taste. This sauce will coat the casserole and keep it moist.
  3. Combine Everything Together: In a large mixing bowl, combine the cooked rice, steamed broccoli, shredded chicken, and most of the shredded cheese with the creamy sauce. Mix until all ingredients are evenly coated.
  4. Assemble and Bake: Transfer the mixture to a greased casserole dish. Sprinkle the remaining shredded cheese evenly on top. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until the cheese is bubbly and golden brown.
  5. Let it Rest and Serve: Allow the casserole to cool for about five minutes before serving. This resting time helps the casserole set, making it easier to scoop and enjoy.
