Instructions

  1. Prepare the Grits: Cook instant grits following package instructions, substituting water with milk or cream for a creamier texture. Stir in butter and shredded sharp cheddar cheese until fully melted and combined. Season with salt and pepper. Set aside to cool slightly so the grits firm up for shaping.
  2. Season and Cook the Shrimp: Toss peeled and deveined shrimp with Cajun seasoning until evenly coated. Heat oil in a skillet over medium-high heat and sauté shrimp for about 2 minutes on each side until just pink and cooked through. Avoid overcooking to keep shrimp tender.
  3. Mix Shrimp with Grits: Chop the cooked shrimp into bite-sized pieces. Gently fold the shrimp and chopped green onions into the slightly cooled grits to combine evenly.
  4. Form and Cook the Bites: Using a spoon or hands, shape the mixture into small, bite-sized balls or patties. Heat a non-stick pan with butter or oil and cook the bites for about 3 minutes per side, until golden and slightly crisp, to seal in flavors and add texture.
