Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons oil or butter (for cooking)

Optional Toppings

  • Sour cream, for serving
  • Salsa, for serving
  • Guacamole, for serving
  • Fresh chopped cilantro, for garnish

Instructions

  1. Cook the Ground Beef: Heat oil or butter in a large skillet over medium heat. Add chopped onion and garlic and sauté until fragrant and translucent. Add the ground beef, breaking it apart with a spoon, and cook until browned and no longer pink, about 5-7 minutes. Stir in chili powder, cumin, salt, and pepper until well combined.
  2. Prepare Your Tortillas: Lay flour tortillas flat on a surface. Sprinkle a generous layer of shredded cheddar and Monterey Jack cheese on one half of each tortilla to help bind the filling and create the gooey texture.
  3. Add the Beef Filling: Evenly spread the cooked and seasoned ground beef over the cheese layer. Add another layer of cheese on top of the beef to ensure the quesadilla stays together while cooking.
  4. Cook the Quesadillas: Fold the tortillas in half to form a half-moon shape. Set the skillet to medium-low heat and carefully place the quesadilla in the pan. Cook each side for 3-4 minutes until the tortilla is golden and crispy, pressing gently with a spatula to ensure even heating and melting. Repeat with remaining quesadillas.
  5. Slice and Serve: Remove quesadillas from skillet. Let them rest for a minute so the cheese can set slightly, then slice into wedges. Serve warm with optional toppings like sour cream, salsa, or guacamole.

Notes

  • Don’t overfill the quesadilla to prevent difficulties flipping and cheese oozing out.
  • Cook over low to medium heat to avoid burning the tortillas before the cheese melts.
  • Grate your own cheese to ensure better melting, avoiding anti-caking agents found in pre-shredded cheese.
  • Press gently while cooking to seal the quesadilla and improve crispiness.
  • Allow the quesadilla to rest a minute before slicing to prevent messy, melted cheese spills.
