Instructions

  1. Prep the Potatoes: Wash and dice the russet potatoes into bite-sized cubes. Toss them in a large bowl with olive oil, salt, pepper, and half of the taco seasoning to coat evenly.
  2. Roast until Crispy: Spread the coated potatoes in a single layer on a baking sheet. Roast in a preheated oven at 425°F (220°C) for 20-25 minutes, flipping halfway through to ensure golden, crispy edges.
  3. Sauté the Veggies: While the potatoes roast, heat a small amount of olive oil in a pan over medium heat. Add the diced onions and bell peppers, sautéing until soft and slightly caramelized. Stir in the remaining taco seasoning and cook for another minute to blend flavors.
  4. Combine and Layer Cheese: Remove the roasted potatoes from the oven and mix them gently with the sautéed vegetables on the baking sheet. Evenly sprinkle shredded sharp cheddar cheese over the top and return to the oven for about 5 minutes until the cheese melts and bubbles.
