Ingredients

Scale

Chicken

  • Boneless, skinless chicken breasts or thighs (about 2-3 lbs)

Broth / Stock

  • 2 cups chicken broth or stock

Vegetables

  • 2 large carrots, peeled and chopped
  • 1 large onion, chopped
  • 1 bell pepper, chopped

Herbs and Spices

  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste

Thickening Agents (Optional)

  • 2 tbsp cornstarch mixed with cold water
  • Or 4 oz cream cheese or 1/2 cup sour cream

Instructions

  1. Prepare Ingredients: Rinse and pat dry your chicken. Chop vegetables into bite-sized pieces. Measure out your spices and liquids to have everything ready for layering.
  2. Layer the Crockpot: Place chopped vegetables in the bottom of the crockpot, then add the chicken pieces on top to evenly distribute flavors and ensure thorough cooking.
  3. Add Seasonings and Liquids: Sprinkle garlic, thyme, paprika, salt, and pepper over the chicken. Pour in the chicken broth or stock so it coats the ingredients without fully submerging them.
  4. Cook Low and Slow: Set your crockpot to low for 6-8 hours or high for 3-4 hours. This slow cooking tenderizes the chicken and melds the flavors beautifully.
  5. Finish and Thicken (Optional): About 30 minutes before serving, stir in your thickening agent such as cornstarch slurry or cream cheese/sour cream to create a creamy, luscious sauce.

Notes

  • Choose chicken thighs for more moisture and flavor retention during slow cooking.
  • Don’t overfill the crockpot; leave space for even heat circulation.
  • Add fresh herbs near the end of cooking to preserve their brightness.
  • Prep vegetables and spices ahead of time to save even more time on busy days.
  • Keep the lid closed during cooking to maintain temperature and reduce cooking time.
