Ingredients

Scale

Noodles

  • 200g rice noodles

Peanut Lime Dressing

  • 1/3 cup natural peanut butter (no added sugars)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 23 tablespoons warm water (to thin dressing)

Vegetables & Garnishes

  • 1 cup grated carrots
  • 1 cup sliced cucumber
  • 3 green onions, chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crushed peanuts (for garnish)

Instructions

  1. Prepare the Noodles: Cook the rice noodles according to package instructions until just tender. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely, ensuring noodles remain firm and do not clump.
  2. Make the Peanut Lime Dressing: In a bowl, whisk together natural peanut butter, fresh lime juice, soy sauce, honey or maple syrup, minced garlic, and grated ginger. Add warm water gradually to thin the dressing to a smooth, pourable consistency that ties all the flavors together.
  3. Prep the Vegetables: Grate the carrots, slice cucumbers thinly, chop the green onions, and roughly chop fresh cilantro. These fresh veggies add refreshing contrast, texture, color, and crunch to the salad.
  4. Toss Everything Together: In a large mixing bowl, combine the cooled noodles, prepared vegetables, and peanut lime dressing. Toss gently yet thoroughly to coat every strand and vegetable with the zesty sauce. Taste and adjust seasoning by adding more lime juice, soy sauce, or honey as preferred.
  5. Garnish and Serve: Transfer the salad to a serving dish and finish with a sprinkle of crushed peanuts and extra cilantro for garnish. Serve chilled or at room temperature for the best flavor experience.

Notes

  • Use room temperature peanut butter for easier whisking and a smooth dressing.
  • Do not overcook noodles; soften just until tender to prevent mushiness after chilling.
  • Prepare the dressing a night ahead for deeper flavor development.
  • Add lime juice gradually and adjust to preferred tanginess last.
  • Toss the salad and dressing right before serving to keep noodles firm and avoid sogginess.
