Ingredients

Scale

Main Ingredients

  • 4 large eggs
  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar or mozzarella cheese (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh herbs (parsley, chives, or basil), finely chopped

Optional Vegetables and Add-Ins

  • 1/4 cup finely diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup finely chopped mushrooms
  • Pinch of red pepper flakes or diced jalapeños (for a spicy kick)
  • Cooked bacon bits or sausage crumbles (for meat addition)

Instructions

  1. Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Lightly grease a muffin tin or use silicone muffin molds to prevent sticking and ensure easy removal of the egg bites.
  2. Mix Ingredients: In a large bowl, whisk together the eggs and cottage cheese until well combined and creamy. Add salt, pepper, shredded cheese (if using), fresh herbs, and any optional vegetables or add-ins you prefer. Stir gently to mix evenly without overworking the batter.
  3. Pour into Molds: Carefully spoon the mixture into each muffin cup, filling about 3/4 full to allow room for rising during baking.
  4. Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the egg bites are set and lightly golden on top. Check doneness by gently pressing the center; it should feel firm but springy.
  5. Cool and Serve: Remove egg bites from the oven and let them cool for a few minutes in the pan to firm up, making them easier to remove and serve without breaking.

Notes

  • Use full-fat cottage cheese to keep egg bites moist and tender.
  • Do not overmix the batter; mix just until combined for a light, fluffy texture.
  • Use an ice cream scoop or measuring cup to portion batter evenly for consistent cooking.
  • Fresh herbs provide the best flavor and aroma; avoid dried herbs which may overcook during baking.
  • Start checking the egg bites around 18 minutes to avoid overbaking as oven temperatures vary.
