Scale

Dry Ingredients

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional herbs or spices such as garlic powder, fresh rosemary, basil, thyme, or dill

Wet Ingredients

  • 1 cup full-fat cottage cheese
  • 1 large egg (or flax egg for vegan adaptation)
  • 1 tablespoon olive oil (plus extra for cooking)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine the cottage cheese, egg, and olive oil until smooth. In a separate bowl, whisk together the flour, baking powder, salt, and any herbs or spices you’re using. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  2. Knead and Shape: Lightly flour your work surface and knead the dough a few times until smooth and elastic. Divide it into equal portions, then roll each portion into a flat circle about 1/4 inch thick.
  3. Cook the Flatbread: Heat a non-stick skillet over medium heat and lightly brush it with olive oil. Cook each flatbread for about 2-3 minutes on each side or until golden brown spots appear and the bread is cooked through.
  4. Cool and Serve: Transfer the cooked flatbreads to a wire rack to cool slightly. Serve warm or at room temperature with your favorite toppings or dips.

Notes

  • Use full-fat cottage cheese to add richness and prevent the dough from drying out.
  • Don’t over-knead the dough; knead just enough to bring it together for a tender texture.
  • Cook on medium heat to avoid burning and ensure even browning.
  • Let the dough rest for 10 minutes after mixing to make rolling out easier.
  • Experiment with various toppings, such as fresh herbs, sautéed vegetables, or a light drizzle of honey.
