Ingredients

Scale

Proteins & Fillings

  • 1 lb ground beef or chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Optional: 1 cup beans (black or pinto), drained and rinsed
  • Optional: 1 cup mixed veggies (corn, bell peppers, etc.)

Dairy & Sauces

  • 8 oz cream cheese, softened
  • 1/4 cup milk or sour cream
  • 1 cup enchilada sauce or taco sauce
  • 2 cups shredded cheese blend (cheddar, Monterey Jack, or Mexican blend)

Carbohydrates & Seasonings

  • 810 flour tortillas (68 inch size)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling: Brown the ground beef or chosen protein over medium heat in a skillet with diced onions and minced garlic until fully cooked and fragrant. Stir in cumin, chili powder, salt, and pepper. Add the enchilada or taco sauce along with any optional beans or vegetables, mixing well to create a flavorful filling.
  2. Mix the Creamy Sauce: In a separate bowl, combine the softened cream cheese with a splash of milk or sour cream. Stir until the mixture becomes smooth and creamy, ensuring a velvety texture that will bind the casserole together.
  3. Assemble the Layers: Spread a thin layer of the creamy sauce on the bottom of your casserole dish. Place a layer of flour tortillas over the sauce, followed by a generous portion of the cooked meat filling and a sprinkle of shredded cheese. Repeat layering with sauce, tortillas, filling, and cheese until all ingredients are used, finishing with a top layer of shredded cheese.
  4. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the assembled casserole for 25-30 minutes, or until the cheese is melted, bubbly, and the edges turn slightly golden.
  5. Rest and Serve: Allow the casserole to rest for at least 5 minutes after baking. This helps the dish set, making it easier to slice and enhancing the melding of flavors before serving.

Notes

  • Use fresh flour tortillas to prevent sogginess and maintain layer integrity.
  • Don’t overfill the layers to ensure neat, easy-to-cut slices.
  • Soften cream cheese at room temperature for a smooth, lump-free sauce.
  • Add a squeeze of lime juice before serving to brighten the flavors.
  • Top with fresh chopped cilantro or green onions for enhanced taste and presentation.
