Ingredients

Scale

Proteins

  • 2 lbs boneless, skinless chicken breasts

Vegetables & Aromatics

  • 6 cups fresh spinach
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Dairy & Sauce

  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups shredded mozzarella cheese

Liquids & Seasonings

  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning (dried herbs blend)

Instructions

  1. Prepare the Chicken: Season the boneless chicken breasts with salt, pepper, and Italian herbs. Cook them in a skillet over medium heat until golden brown and fully cooked through. Set aside to cool slightly, then chop into bite-sized pieces.
  2. Sauté the Aromatics and Spinach: In the same skillet, cook diced onions and minced garlic until fragrant and translucent. Add fresh spinach and sauté until wilted, stirring to combine all the flavors.
  3. Make the Creamy Sauce: Lower the heat and stir in the softened cream cheese, sour cream, and chicken broth into the skillet mixture. Gently cook and stir until the sauce thickens into a smooth, luscious texture.
  4. Combine and Assemble: Mix the cooked chicken pieces into the creamy spinach sauce, ensuring they are evenly coated. Pour the mixture into a greased baking dish and top generously with shredded mozzarella cheese.
  5. Bake Until Golden: Bake the casserole in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the top is bubbly and golden brown. Remove from oven and let rest for a few minutes before serving to allow it to set.

Notes

  • Use fresh spinach instead of frozen for better texture and flavor.
  • Do not overcook chicken to keep it juicy and tender in the casserole.
  • Warm cream cheese before mixing to avoid lumps in the sauce.
  • Allow casserole to rest after baking for easier slicing and better texture.
  • Use a sharp cheese grater for freshly shredded mozzarella to ensure even melting.
