Alfredo Sauce

  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare and Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, about 8 to 10 minutes. Reserve 1 cup of pasta water before draining the pasta.
  2. Cook the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper. Heat olive oil or butter in a large skillet over medium heat. Cook the chicken for 5 to 7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let rest for a few minutes, then slice into strips.
  3. Make the Alfredo Sauce: Using the same skillet, lower the heat and melt the butter. Add minced garlic and sauté until fragrant but not browned, about 1 minute. Pour in the heavy cream, stirring constantly, and simmer gently for 3 to 5 minutes until the sauce begins to thicken.
  4. Add Cheese and Season: Gradually whisk in the grated Parmesan cheese until the sauce is smooth and melted. Season with salt and black pepper to taste. If the sauce is too thick, slowly add reserved pasta water little by little until you reach your desired consistency.
  5. Combine Everything: Add the cooked fettuccine and sliced chicken back into the skillet with the Alfredo sauce. Toss gently to coat everything evenly with the creamy sauce. Heat for an additional 1 to 2 minutes to warm through. Serve immediately.
