Ingredients

Scale

For the Salmon

  • 4 skin-on salmon fillets (about 6 oz each)
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 1 tablespoon butter (for searing)

For the Garlic Butter Cream Sauce

  • 2 tablespoons butter
  • 3 garlic cloves, freshly minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach leaves
  • 1/3 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Additional dried Italian herbs, optional (to taste)

Instructions

  1. Prepare and Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt, black pepper, and dried Italian herbs to ensure the salmon is flavorful and ready for searing.
  2. Sear the Salmon: Heat a skillet over medium-high heat and melt 1 tablespoon of butter. Place the salmon fillets skin-side down in the skillet. Sear for 4-5 minutes until the skin develops a golden-crisp crust. Carefully flip and cook the other side for an additional 3 minutes. Remove the salmon from the pan and set aside.
  3. Make the Garlic Butter Sauce: In the same skillet, add 2 tablespoons of butter and sauté the minced garlic until fragrant, about 30 seconds. Stir in the chopped sun-dried tomatoes and cook for one minute. Pour in the heavy cream and reduce the heat to low. Let the sauce simmer gently until it thickens slightly.
  4. Add Spinach and Parmesan: Toss in fresh spinach leaves and grated Parmesan cheese. Stir continuously until the spinach wilts and the sauce becomes creamy and smooth. Season with additional salt, pepper, and Italian herbs as needed.
  5. Combine and Serve: Return the seared salmon fillets to the skillet, spooning some of the sauce over the top. Allow everything to meld together for 1-2 minutes. Plate the salmon and garnish with fresh herbs or extra Parmesan cheese before serving.

Notes

  • Use room temperature salmon to ensure even cooking and prevent sticking.
  • Don’t overcrowd the pan; leave space between fillets for a perfect sear.
  • Opt for fresh garlic instead of pre-minced for more vibrant flavor.
  • Simmer the cream sauce gently on low to avoid curdling.
  • Let spinach wilt naturally to release moisture slowly for a smooth sauce texture.
