Crockpot Chicken Alfredo Lasagna

Crockpot Chicken Alfredo Lasagna is a creamy, comforting slow-cooked meal that layers tender chicken, rich Alfredo sauce, and melty cheeses in a crockpot. Perfect for effortless family dinners or busy weeknights, this dish delivers rich, cheesy flavors with minimal prep and customizable ingredients to suit your taste and dietary preferences.

Ingredients

Scale

Protein

  • 3 boneless chicken breasts

Sauces and Dairy

  • 2 cups Alfredo sauce
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Pasta

  • 9 no-boil lasagna noodles

Vegetables and Flavorings

  • 2 cloves fresh garlic, minced
  • 2 cups fresh spinach (optional)
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the boneless chicken breasts with salt, pepper, and Italian seasoning. Place them at the bottom of the crockpot to create a flavorful base for the lasagna.
  2. Mix the Cheesy Layers: In a bowl, combine ricotta cheese, grated Parmesan, minced fresh garlic, a pinch of salt, and pepper. Mix well to create a creamy, flavorful layer.
  3. Layer the Ingredients: Spread a layer of Alfredo sauce over the chicken in the crockpot. Add a single layer of no-boil lasagna noodles on top, then spoon dollops of the ricotta mixture evenly over the noodles. Add fresh spinach if desired. Repeat these layers until ingredients are used, finishing with a generous layer of shredded mozzarella cheese on top.
  4. Cook Low and Slow: Cover the crockpot and cook on low heat for 4 to 5 hours, or until the chicken is fully cooked through and the noodles are tender, allowing all the flavors to meld perfectly.
  5. Let It Rest and Serve: After cooking, let the lasagna rest in the crockpot for 10 to 15 minutes. This helps the layers set for easier slicing and serving.

Notes

  • Use no-boil noodles to avoid pre-cooking and ensure perfect softness in the crockpot.
  • Don’t overfill the crockpot to allow even heat circulation and thorough cooking.
  • Distribute sauces and cheeses evenly in each layer for consistent flavor.
  • Verify chicken reaches an internal temperature of 165°F (74°C) for safety and juiciness.
  • Allow the lasagna to rest before serving to firm up layers and prevent it from falling apart.
