Instructions

  1. Prepare Your Batter: Separate the eggs. Whisk the yolks with sugar until pale and creamy. Fold in the pistachio paste. Sift together the flour and baking powder, then gently fold into the egg yolk mixture. Beat the egg whites to stiff peaks and fold them in gradually to keep the batter light and fluffy.
  2. Bake the Sponge: Line a sheet pan with parchment paper and spread the batter evenly for uniform thickness. Bake at 350°F (175°C) for 12-15 minutes, or until the cake springs back when touched lightly. Take care not to overbake to keep the sponge moist.
  3. Roll the Cake While Warm: Immediately invert the baked sponge onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and gently roll the cake with the towel from one short edge to the other to ‘memorize’ its shape and prevent cracking.
  4. Prepare the Cream Filling: Whip heavy cream with vanilla extract until soft peaks form. Fold in chopped pistachios or pistachio paste for added texture and flavor. Keep the whipped cream chilled until ready to use.
