Easy Cheeseburger Pockets

Easy Cheeseburger Pockets are a quick and satisfying handheld snack or meal combining juicy beef, melted cheddar cheese, and classic cheeseburger seasonings wrapped in flaky puff pastry. Perfect for busy days, lunchboxes, picnics, or party appetizers, these pockets offer a comforting, customizable flavor in every bite.

Ingredients

Scale

Filling

  • 1 lb lean ground beef
  • 1/2 cup finely chopped onion
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup shredded sharp cheddar cheese

Dough and Finish

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Prepare the Filling: Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Once fully browned, drain excess grease. Stir in finely chopped onions, ketchup, mustard, salt, and pepper. Cook for an additional 2-3 minutes until blended and onions soften.
  2. Roll Out the Dough: Unfold the puff pastry sheet on a lightly floured surface. Cut into squares approximately 4×4 inches for bite-sized pockets.
  3. Assemble the Pockets: Spoon about 2 tablespoons of the beef mixture onto the center of each square. Sprinkle a generous amount of shredded cheddar cheese on top. Fold dough diagonally to form triangles and press edges firmly with a fork to seal well and prevent leaks.
  4. Apply the Egg Wash: Beat the egg and brush a light coat over the tops of all pockets to achieve a golden, glossy finish when baked.
  5. Bake Until Golden: Place the pockets on a parchment-lined baking sheet. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until puffed and golden brown. Allow to cool for a few minutes before serving.

Notes

  • Use cold puff pastry dough to maximize flakiness and lift.
  • Do not overfill—limit filling to about 2 tablespoons per pocket to prevent bursting.
  • Seal edges tightly using a fork to keep filling inside.
  • Let pockets rest a few minutes after baking to avoid burning from hot cheese.
  • Add sautéed mushrooms, bell peppers, or other veggies for extra flavor and nutrition.
