Instructions

  1. Preheat and Prepare: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat to prevent sticking and promote even baking.
  2. Mix Wet Ingredients: In a medium bowl, whisk together the nut butter, honey or maple syrup, vanilla extract, and the egg or flax egg until smooth and well combined.
  3. Combine Dry Ingredients: In a separate large bowl, stir together oats, baking soda, salt, chopped nuts, dried fruits, and any optional spices until evenly distributed.
  4. Bring Wet and Dry Together: Pour the wet mixture into the dry ingredients and gently fold them together with a spatula or wooden spoon until just combined, forming a sticky dough.
  5. Shape Cookies: Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart to allow for spreading.
