For the Beef Filling

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 Scotch bonnet pepper, finely chopped (optional)
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon turmeric or curry powder
  • 1/2 cup beef broth
  • Salt and freshly ground black pepper, to taste

For Finishing

  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the dough: Combine the flour and salt in a mixing bowl. Cut in the cold, cubed butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs. Gradually add cold water and mix just until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Cook the filling: In a skillet over medium heat, sauté the diced onions, minced garlic, and Scotch bonnet pepper (if using) until fragrant and softened. Add the ground beef, breaking it apart with a spoon, and cook until browned. Season with thyme, allspice, turmeric, salt, and pepper. Pour in the beef broth and simmer until the mixture thickens slightly and flavors meld. Remove from heat and let cool.
  3. Assemble the patties: On a floured surface, roll the chilled dough to about 1/8 inch thickness. Cut into 5-inch diameter circles. Place a spoonful of the cooled beef filling on one half of each circle, leaving edges clear. Fold the dough over the filling and press edges firmly with a fork to seal.
  4. Bake until golden: Preheat your oven to 375°F (190°C). Arrange the patties on a parchment-lined baking tray. Brush each patty with beaten egg for a golden finish. Bake for 25-30 minutes or until the crust is golden and crisp. Allow to cool slightly before serving.
