Ingredients

Scale

Protein and Filling

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 cup refried beans

Layers and Cheese

  • 810 flour tortillas (6-inch size)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa

Garnishes and Extras

  • Fresh cilantro, chopped (optional)
  • Sour cream, for serving

Instructions

  1. Prepare the Seasoned Beef Mixture: Heat a skillet over medium heat and cook the ground beef with diced onion and minced garlic until browned. Drain excess fat. Stir in the taco seasoning and water, then let simmer for a few minutes until thickened and flavors meld.
  2. Assemble the Layers: Grease a baking dish. Spread a thin, even layer of refried beans on the bottom. Cover with a layer of flour tortillas. Spoon half of the seasoned beef mixture over the tortillas, spreading evenly. Sprinkle a generous handful of shredded cheddar and Monterey Jack cheeses. Add some salsa over the cheese for moisture and tang. Repeat the layering process, finishing with a top layer of cheese.
  3. Bake Until Bubbly and Golden: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove the foil and bake uncovered for another 10 minutes, or until the cheese is melted, bubbly, and golden on the edges. Let the lasagna rest for 5-10 minutes before slicing and serving to allow the layers to set.

Notes

  • Use fresh flour tortillas instead of day-old for best layering texture.
  • Drain cooked beef thoroughly to avoid soggy layers.
  • Spread fillings evenly to ensure balanced flavor throughout.
  • Adjust taco seasoning and salsa to customize spice level.
  • Allow the lasagna to rest before slicing for cleaner, neater pieces.
  • Use an oven-safe glass or ceramic dish for even baking and easy cleanup.
