Ingredients

Scale

Meringue Base Ingredients

  • 4 large egg whites, fresh and at room temperature
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract

Optional Ingredients for Color and Decoration

  • Green food coloring (optional, for Christmas tree hue)
  • Sprinkles or edible decorations (for festive finishing touches)

Variations (Optional)

  • Melted dark or white chocolate for drizzle
  • Finely chopped nuts (pistachios or almonds)
  • Peppermint or almond extract (substitute for vanilla)
  • Aquafaba (chickpea water) as egg white substitute for vegan option
  • Matcha powder or spinach juice for natural green coloring

Instructions

  1. Prepare Your Workspace and Ingredients: Ensure your mixing bowl and beaters are completely clean and free of grease for proper whipping. Gather and measure all ingredients before starting to ensure a smooth process.
  2. Whip Egg Whites until Soft Peaks Form: Beat the egg whites at medium speed using an electric mixer until soft peaks form, which means the mixture holds its shape lightly but remains flexible.
  3. Gradually Add Sugar and Cream of Tartar: Slowly incorporate the granulated sugar along with the cream of tartar while continuing to whip. Beat until stiff, glossy peaks form that stand firmly when the beaters are lifted.
  4. Add Vanilla and Food Coloring: Carefully fold in the vanilla extract and green food coloring (if using), mixing until evenly blended to achieve the festive green appearance.
  5. Pipe the Meringue Trees: Transfer the meringue mixture into a piping bag fitted with a star tip. Pipe tree shapes onto lined baking sheets by creating small swirled cones resembling Christmas trees, leaving space between each.
  6. Decorate Before Baking: Immediately add sprinkles or edible decorations so they adhere during baking, enhancing the festive look.
  7. Bake Low and Slow: Bake in a preheated oven at around 200°F (90°C) for approximately 90 minutes to dry completely. After baking, turn off the oven and let the meringues cool inside to prevent cracks.

Notes

  • Use room temperature eggs to achieve better volume when whipping.
  • Add sugar gradually to help stabilize the meringue.
  • Practice piping on parchment paper before piping the trees to perfect your technique.
  • Keep the oven door closed during baking to avoid temperature fluctuations that cause cracks or collapse.
  • Meringues are done when they easily lift off the parchment and feel dry to the touch.
