Instructions

  1. Caramelize the Onions: Thinly slice the yellow onions. In a heavy-bottomed pot, heat butter and olive oil over medium-low heat. Slowly cook the onions, stirring occasionally, for 40-50 minutes until they become deeply golden brown and emit a rich, sweet aroma. Patience is key to developing the signature flavor.
  2. Add Garlic and Deglaze the Pan: Add minced garlic and cook for 1 minute until fragrant. Pour in dry white wine or sherry to deglaze the pan, scraping up the browned bits from the bottom to add complexity and acidity that balance the sweetness.
