Ingredients

Scale

Protein

  • 4 boneless, skin-on chicken thighs or breasts

Vegetables

  • 1 pound fresh green beans, washed and trimmed
  • 1.5 pounds red potatoes, cut into evenly sized chunks

Flavorings

  • 4 garlic cloves, minced (divided)
  • 1 fresh lemon (juice and zest)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper, to taste

Instructions

  1. Prep Your Ingredients: Wash and trim the green beans. Cut red potatoes into evenly sized chunks to ensure uniform roasting. Mince the garlic cloves and zest the fresh lemon. Pat the chicken dry with paper towels and season it generously with salt, pepper, and the dried herbs.
  2. Roast the Potatoes: Preheat your oven to 425°F (220°C). Toss the red potato chunks with 1 tablespoon of olive oil, salt, pepper, and half of the minced garlic. Spread the potatoes out evenly on a rimmed baking sheet and roast for 15-20 minutes until they start to soften and brown.
  3. Add Chicken and Green Beans: Remove the baking sheet from the oven. Nestle the seasoned chicken pieces among the partially roasted potatoes. Scatter the trimmed green beans over the tray. Drizzle with the remaining olive oil, add the lemon zest, and sprinkle the rest of the garlic and herbs evenly over the entire pan.
  4. Roast Until Cooked: Return the baking sheet to the oven and roast everything together for an additional 20-25 minutes. Cook until the chicken reaches an internal temperature of 165°F (74°C), potatoes are tender, and green beans are crisp-tender.
  5. Add Fresh Lemon Juice: Remove the pan from the oven and immediately squeeze fresh lemon juice over the hot chicken and vegetables. Let the dish rest for a few minutes before serving to allow the flavors to meld.

Notes

  • Cut potatoes into uniform pieces for even roasting.
  • Pat chicken dry to ensure crispy skin and better browning.
  • Use fresh lemon zest and juice for vibrant, natural flavor.
  • Avoid overcrowding the pan to prevent steaming; allow space for crisping.
  • Check chicken’s internal temperature with a meat thermometer for safe and juicy results.
