Ingredients

Scale

Main Ingredients

  • 4 fresh cod fillets (firm, skinless, about 6 oz each)
  • 3 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (plus extra for cooking)
  • 2 green onions, thinly sliced
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: sesame seeds for garnish

Instructions

  1. Prepare the Glaze: In a small bowl, whisk together soy sauce, fresh grated ginger, minced garlic, honey or brown sugar, rice vinegar, and a splash of sesame oil until smooth and well combined.
  2. Marinate the Cod: Place the cod fillets in a shallow dish or ziplock bag and pour half of the glaze over them. Refrigerate and let marinate for 15-20 minutes to absorb the flavors.
  3. Preheat and Prepare Cooking Surface: Heat a non-stick skillet over medium-high heat and add a little sesame oil or neutral oil to ensure a nice sear and prevent sticking.
  4. Cook the Cod: Remove cod from the marinade (discard used marinade), then cook fillets presentation side down for about 4-5 minutes per side, depending on thickness, until opaque and flaky.
  5. Glaze the Cod: During the last minute of cooking, brush the reserved glaze generously over the fillets and let it caramelize slightly in the pan, creating a glossy finish.
  6. Garnish and Serve: Transfer fish to serving plates and garnish with thinly sliced green onions and optional sesame seeds for added color and crunch.

Notes

  • Always use fresh ginger and garlic for maximum flavor in the glaze.
  • Avoid overcooking the cod to keep it moist and flaky.
  • Marinate cod for no longer than 20 minutes to prevent excessive saltiness.
  • Use a non-stick pan to ensure the fish does not stick or break apart during cooking.
  • Reserve some glaze for brushing during cooking and plating.
