Ingredients

Scale

Pasta

  • 8 oz short pasta (rotini or penne)

Produce

  • 1 cup red or green seedless grapes, halved
  • 1/4 cup fresh basil or mint leaves, chopped
  • 1/4 cup thinly sliced red onion
  • 2 tbsp fresh lemon juice

Dairy

  • 4 oz block feta cheese, crumbled

Pantry

  • 3 tbsp extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and add the pasta. Cook according to package directions until al dente, then drain and rinse with cold water to stop the cooking process and cool the pasta.
  2. Prepare the ingredients: While the pasta cooks, halve the grapes, thinly slice the red onion, chop the fresh herbs, and crumble the feta cheese.
  3. Make the dressing: In a large mixing bowl, whisk together the extra virgin olive oil, fresh lemon juice, salt, and freshly ground black pepper to taste.
  4. Toss the salad: Add the cooled pasta, grapes, red onion, fresh herbs, and feta cheese to the bowl with the dressing. Gently toss everything together until well combined and evenly coated.
  5. Adjust seasoning and serve: Taste the salad and add additional salt, pepper, or lemon juice as needed. Serve immediately or chill for 30 minutes to let flavors meld before serving.

Notes

  • You can substitute the pasta for whole wheat, gluten-free, or quinoa pasta to suit dietary preferences.
  • Add toasted walnuts or almonds for extra crunch and nuttiness.
  • For a vegan version, replace feta with vegan cheese or marinated tofu cubes.
  • Include grilled chicken or chickpeas to add protein and make the salad more filling.
  • Try different herbs such as dill, parsley, or cilantro for unique flavor variations.
  • Chilling the salad before serving enhances the flavors.
