  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Shrimp and Marinade: Rinse and pat dry the shrimp thoroughly. In a mixing bowl, combine 2 tablespoons melted butter, 2 tablespoons lemon juice, minced garlic, capers, olive oil, salt, and pepper. Toss the shrimp gently in this mixture and let them marinate for 15 to 20 minutes while you prepare your grill.
  2. Skewer the Shrimp: Thread the marinated shrimp evenly onto soaked wooden or metal skewers, ensuring the shrimp lie flat and do not overlap for even cooking and easy flipping.
  3. Preheat the Grill: Heat the grill to medium-high. Clean and oil the grill grates briefly to prevent sticking and to create perfect grill marks.
  4. Grill the Skewers: Place the shrimp skewers on the hot grill and cook about 2-3 minutes per side until the shrimp turn pink, opaque, and develop a slight char.
  5. Make the Piccata Sauce: While grilling, warm 1 tablespoon butter in a small saucepan over low heat. Add 1 tablespoon lemon juice, 1 tablespoon capers, and chopped parsley. Stir gently until combined and aromatic.
