Ingredients

Scale

Shrimp and Pineapple

  • 1 lb medium to large fresh shrimp, peeled and deveined
  • 2 cups ripe pineapple chunks
  • 810 wooden skewers, soaked in water for at least 30 minutes

Marinade

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, lime juice, honey, minced garlic, smoked paprika, salt, and pepper until well combined. This flavorful mixture will tenderize the shrimp and infuse each bite with bright, smoky, and slightly sweet flavors.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, tossing to coat evenly. Cover the bowl and refrigerate for 15–20 minutes to let the flavors soak in without overpowering the delicate shrimp texture.
  3. Skewer the Shrimp and Pineapple: Thread shrimp and pineapple chunks alternately onto the soaked wooden skewers, leaving a little space between each piece for even cooking and char.
  4. Preheat the Grill: Heat your grill to medium-high, ensuring it reaches the perfect temperature for quick, flavorful searing without drying out the shrimp.
  5. Grill the Skewers: Place the skewers on the grill for about 2–3 minutes per side, turning carefully to get those iconic grill marks and ensuring the shrimp is opaque and cooked through.
  6. Serve and Enjoy: Remove the skewers from the grill and optionally drizzle with a bit more fresh lime juice or sprinkle with chopped herbs for a fresh finish. Serve immediately for the best taste and texture.

Notes

  • Don’t overcook shrimp to avoid a rubbery texture.
  • Soak wooden skewers properly in water beforehand to prevent burning during grilling.
  • Use fresh shrimp and pineapple for the best flavor.
  • Brush grill grates with oil before cooking to prevent sticking.
  • Keep marinating time to 15–20 minutes to avoid mushy shrimp.
