Ingredients

Scale

Steak and Seasoning

  • 1 to 1.5 lbs ribeye, sirloin, or filet mignon steak
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil

Herb Butter

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon lemon zest (from about 1 lemon)

Instructions

  1. Prep the Steak: Remove the steak from the refrigerator and allow it to come to room temperature for about 30 minutes. Pat the steak dry with paper towels, then season generously with salt and pepper on both sides to enhance the natural beef flavors.
  2. Make the Herb Butter: Soften the unsalted butter at room temperature. Finely chop the fresh parsley, thyme, and chives. Mince the garlic and zest the lemon. Combine all these ingredients into the butter and mix thoroughly to infuse the vibrant flavors. Shape the butter mixture into a log on parchment paper and chill until firm.
  3. Preheat the Grill: Light your grill to medium-high heat. Ensure the grill grates are hot before placing the steak on them. Lightly oil the grates to prevent sticking.
  4. Grill the Steak: Place the steak on the grill and cook for 4-5 minutes on one side without moving it to develop a nice crust. Flip and grill for another 3-5 minutes depending on thickness and desired doneness (about 130°F for medium-rare). Remove the steak and let it rest for 5-10 minutes to allow the juices to redistribute.
  5. Serve with Herb Butter: Slice the chilled herb butter into rounds and place a piece atop the warm steak. The butter will slowly melt, creating a rich, flavorful sauce that complements the grilled flavors perfectly.

Notes

  • Allow steak to come to room temperature before grilling for even cooking.
  • Use a meat thermometer to reach desired doneness; 130°F for medium-rare.
  • Rest the steak after grilling to keep it juicy and tender.
  • Prepare herb butter a day ahead for deeper flavor infusion.
  • Choose quality cuts of steak for best flavor and texture.
