Meat & Protein
Pasta
- 8 oz egg noodles or pasta of choice
Vegetables
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (optional)
Liquids & Dairy
- 2 cups beef broth
- 1 cup sour cream
- 2 tbsp butter or oil
Thickeners & Seasonings
- 2 tbsp all-purpose flour
- Salt, to taste
- Black pepper, to taste
Garnish (optional)
- Cook the pasta: Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until just al dente. Drain and set aside, reserving a little pasta water for the sauce if needed.
- Brown the ground beef: In a large skillet over medium-high heat, melt butter or heat oil. Add ground beef and cook, breaking it up with a spoon until browned and cooked through. Season lightly with salt and pepper. Remove excess grease if necessary.
- Sauté onions, garlic, and mushrooms: Add chopped onion and garlic to the skillet with the beef. Cook until softened and fragrant. Toss in mushrooms if using and sauté until tender and browned.
- Make the sauce: Sprinkle flour over the mixture and stir well, cooking for about a minute to eliminate raw flour taste. Gradually pour in beef broth while stirring constantly to avoid lumps. Bring to a simmer and let thicken slightly.
- Finish with sour cream: Reduce heat to low, stir in sour cream until the sauce is creamy and smooth. Adjust seasoning with salt and pepper to taste. If the sauce seems too thick, add reserved pasta water a little at a time.
- Combine pasta and sauce: Toss cooked noodles into the skillet with the sauce until evenly coated. Heat through and transfer to serving dishes.
Notes
- Don’t overcook the noodles to keep them al dente and prevent mushiness.
- Use low heat when adding sour cream to avoid curdling, keeping the sauce smooth.
- Drain excess fat after browning the beef to prevent an oily dish.
- Reserve pasta water to loosen the sauce if it thickens too much.
- Sauté mushrooms until golden for a deep umami flavor and pleasant texture.
