Heavenly Millionaire's Cheesecake

Heavenly Millionaire’s Cheesecake features a rich, creamy filling atop a crunchy buttery biscuit base, finished with a luscious caramel topping. This indulgent no-bake dessert balances texture and flavor beautifully with simple pantry ingredients, perfect for special occasions or any sweet craving.

Ingredients

Scale

For the Biscuit Base

  • 200g digestive biscuits, crushed
  • 100g melted butter

For the Cheesecake Filling

  • 300g cream cheese, at room temperature
  • 395g (1 can) sweetened condensed milk
  • 2 tbsp lemon juice
  • 200ml double cream or heavy cream, whipped to soft peaks

For the Topping

  • 150ml caramel sauce (homemade or store-bought)

Instructions

  1. Prepare the Biscuit Base: Crush the digestive biscuits into fine crumbs, then combine them with melted butter. Press this mixture firmly into the base of a springform tin and chill in the refrigerator to set the crust.
  2. Make the Creamy Filling: Beat the cream cheese until smooth, then gradually add the sweetened condensed milk and lemon juice. Whip the double cream separately until soft peaks form, then gently fold it into the cream cheese mixture to keep it light and airy.
  3. Assemble the Cheesecake: Pour the filling onto the chilled biscuit base, using a spatula to smooth the top evenly. Return the tin to the fridge and allow it to set for several hours or overnight for the best texture.
  4. Add the Caramel Topping: Once the cheesecake has fully set, carefully pour the caramel sauce on top and spread it evenly. Chill again briefly so the topping firms slightly and becomes glossy.
  5. Serve and Enjoy: Remove the cheesecake from the tin, slice with a warm knife for clean edges, and enjoy the perfect harmony of biscuit crunch, creamy filling, and luscious caramel topping.

Notes

  • Use room temperature cream cheese and cream for easier mixing and a smoother filling.
  • Chill the cheesecake thoroughly for at least 4 hours or overnight for the perfect texture.
  • Warm your knife in hot water and wipe it clean between slices to get neat, clean edges.
  • Fold in whipped cream gently to maintain a light and airy filling.
  • Choose a rich, buttery caramel sauce to enhance the topping’s flavor.
  • For a gluten-free version, substitute digestive biscuits with gluten-free cookies or graham crackers.
  • Store leftovers tightly wrapped in the fridge for up to 4 days or freeze for up to one month.
  • This cheesecake is best served chilled and should not be reheated; allow it to come to room temperature briefly before serving.
