Ingredients

Scale

Sushi Rice Layer

  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Salmon Topping

  • 12 oz cooked canned or fresh salmon, flaked
  • 1/2 cup Japanese mayo
  • 2 tablespoons sriracha or chili mayo (adjust to taste)

Optional Toppings and Garnishes

  • Shredded cheese (optional)
  • Crushed nori sheets or furikake (optional)
  • Cucumber or avocado slices (optional)
  • Thinly sliced green onions (optional garnish)
  • Toasted sesame seeds (optional garnish)

Instructions

  1. Prepare the Sushi Rice: Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. While the rice is still warm, gently fold in 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt. Allow the rice to cool slightly, then spread it evenly in a greased baking dish.
  2. Make the Salmon Mixture: In a bowl, flake 12 oz of cooked salmon with a fork. Mix in 1/2 cup Japanese mayo and 2 tablespoons sriracha or chili mayo. Adjust the spice level to your liking. This creamy mixture will form the topping.
  3. Assemble the Bake: Spread the salmon mixture evenly over the bed of sushi rice. If desired, sprinkle shredded cheese or crushed nori on top for added texture. Gently press down so the layers adhere well.
  4. Bake Until Golden and Bubbling: Preheat the oven to 375°F (190°C). Bake the assembled dish for 15-20 minutes until the top is golden brown and bubbling, creating a delicious crust.
  5. Serve and Enjoy: Remove from the oven and let rest for 5 minutes to set. Cut into squares and serve warm with extra nori sheets or rice crackers for scooping.

Notes

  • Use fresh or sustainably sourced salmon for best flavor.
  • Gently fold the vinegar seasoning into the rice to keep it fluffy and sticky, but not mushy.
  • Adjust spice levels by using sriracha, chili mayo, or wasabi mayo.
  • Let the bake rest 5 minutes before serving for best texture.
  • Use a glass or ceramic baking dish to ensure even heat distribution and avoid burning edges.
