Ingredients

Scale

Steak and Seasoning

  • 1 to 1.5 lbs ribeye, strip, or filet mignon steak
  • 2 tbsp olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Herb Butter

  • 4 tbsp unsalted butter, softened
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • 1 clove garlic, minced (optional)
  • 1 tsp fresh lemon juice

Instructions

  1. Prepare Your Steak: Pat the steaks dry with paper towels to ensure an even sear. Season both sides generously with salt and freshly ground black pepper. Let the steaks rest at room temperature for about 20 minutes for even cooking.
  2. Mix Herb Butter: In a small bowl, combine softened unsalted butter with finely chopped parsley, thyme, rosemary, minced garlic, and a squeeze of fresh lemon juice. Mix until well incorporated. Refrigerate to firm slightly while grilling.
  3. Preheat and Oil the Grill: Preheat your grill to high heat, approximately 450-500°F. Clean the grates thoroughly, then brush lightly with olive oil to prevent sticking and help create grill marks.
  4. Grill the Steaks: Place steaks on the hot grill and cook without moving for 4 to 5 minutes, depending on thickness and desired doneness. Flip once and grill the other side for an additional 3 to 4 minutes for medium-rare. Use a meat thermometer for precision if desired.
  5. Rest and Top with Herb Butter: Remove steaks from the grill and let rest on a cutting board for 5 to 10 minutes to redistribute juices. Top each steak with a generous dollop of the herb butter and let it melt over the warm meat before serving.

Notes

  • Allow steaks to come to room temperature for even cooking.
  • Use a meat thermometer to check doneness (130°F medium-rare, 140°F medium, 150°F medium-well).
  • Resting steaks after grilling is essential to keep them juicy and tender.
  • Herb butter can be made ahead and refrigerated to save time.
  • For indoor cooking, use a cast-iron skillet or grill pan on high heat.
