Ingredients

Scale

Beef and Seasoning

  • 1 lb ground beef (80/20 blend)
  • Salt, to taste
  • Pepper, to taste
  • Onion powder, 1 tsp
  • Garlic powder, 1 tsp

Tortillas

  • 68 soft flour or corn tortillas

Cheese

  • 68 slices cheddar or American cheese

Toppings

  • 1 cup fresh lettuce, chopped
  • 1 cup tomatoes, diced
  • ½ cup pickles, sliced

Cooking Fat

  • 2 tbsp butter or oil

Sauce

  • Your favorite sauce (e.g., chipotle mayo or ketchup), as desired

Instructions

  1. Prepare the Beef: Divide cold ground beef into small balls, approximately 3 ounces each. Lightly season with salt, pepper, onion powder, and garlic powder to ensure balanced flavor.
  2. Heat the Pan: Preheat a cast-iron skillet or heavy pan over medium-high heat. Add butter or oil to prevent sticking and help develop a perfect sear on the patties.
  3. Smash the Beef: Place each beef ball onto the hot pan and immediately press down firmly with a sturdy spatula to flatten into thin patties. Hold the pressure for 10-15 seconds to create crispy, caramelized edges.
  4. Cook and Flip: Cook the patties for 2-3 minutes without moving them, then carefully flip each patty. Place a slice of cheese on top and let it melt while the other side cooks for another 1-2 minutes.
  5. Warm the Tortillas: While the patties finish cooking, warm the tortillas in a separate pan or microwave until soft and pliable, ready for assembly.
  6. Assemble the Tacos: Place smashed burger patties onto each warmed tortilla. Top with fresh lettuce, diced tomatoes, sliced pickles, and your favorite sauce. Fold gently and serve immediately for a juicy, flavorful taco experience.

Notes

  • Do not overcrowd the pan to maintain high sear temperature; cook patties in batches if necessary.
  • Use a sturdy metal spatula for smashing the beef patties to achieve crispier edges.
  • Season the beef just before cooking to preserve juiciness.
  • Allow patties to rest briefly after cooking to retain juices before assembling tacos.
  • Choose fresh, high-quality toppings to perfectly balance the richness of the beef.
