Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • Pinch of crushed red pepper flakes (optional)
  • 2 tbsp olive oil

Sauce

  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (if dried, soak in warm water first)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese

Pasta

  • 8 oz penne or rigatoni pasta
  • Reserved pasta water, as needed

Garnishes & Extras

  • Fresh basil leaves, chopped
  • Extra Parmesan cheese, for serving
  • Additional crushed red pepper flakes (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and a pinch of crushed red pepper flakes. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through, about 5-6 minutes per side. Remove chicken from the skillet and set aside.
  2. Make the Creamy Sauce: In the same skillet, sauté minced garlic until fragrant. Add chopped sun-dried tomatoes, then pour in the chicken broth. Let the broth reduce slightly. Stir in heavy cream and freshly grated Parmesan cheese. Allow the sauce to simmer and thicken gently.
  3. Cook the Pasta: Meanwhile, boil your choice of pasta until al dente according to package instructions. Drain, reserving a bit of the pasta water to adjust the sauce consistency if necessary.
  4. Combine and Finish: Slice the cooked chicken breasts and return them to the skillet with the sauce. Add the drained pasta and toss thoroughly to coat each piece with the creamy sauce. Mix in fresh basil leaves and adjust salt, pepper, and crushed red pepper flakes to taste.

Notes

  • Pound chicken breasts to an even thickness for uniform cooking.
  • Use reserved pasta water to loosen the sauce if it becomes too thick.
  • Add fresh basil at the end to preserve its bright flavor and color.
  • Soak dried sun-dried tomatoes in warm water before chopping for better texture.
  • Use freshly grated Parmesan cheese for best flavor and creaminess.
