Ingredients

Scale

Meatloaf Ingredients

  • 1 ½ pounds ground beef (80/20 lean)
  • 1 cup bread crumbs
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Mushroom Gravy Ingredients

  • 3 tablespoons butter
  • 8 ounces fresh mushrooms, sliced
  • 3 tablespoons all-purpose flour (or gluten-free flour alternative)
  • 2 cups beef broth
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme or parsley, chopped (optional)

Instructions

  1. Prepare the Meatloaf Mixture: Finely chop the onion and garlic. In a large bowl, gently combine the ground beef, bread crumbs, eggs, milk, Worcestershire sauce, chopped onion, minced garlic, salt, and pepper by hand until fully incorporated. Be careful not to overmix to retain tenderness.
  2. Shape and Bake the Meatloaf: Transfer the mixture onto a lined baking sheet or into a loaf pan, shaping it into an even loaf. Bake in a preheated oven at 350°F (175°C) for about 60 minutes or until the internal temperature reaches 160°F (71°C).
  3. Make the Mushroom Gravy: While the meatloaf bakes, melt the butter in a skillet over medium heat. Add sliced mushrooms and sauté until browned and tender. Stir in the flour to form a roux, then gradually whisk in the beef broth. Simmer the gravy until it thickens, seasoning with salt, pepper, and fresh herbs if desired.
  4. Rest and Serve: After baking, let the meatloaf rest for 10 minutes to allow juices to redistribute. Slice the meatloaf and pour the warm mushroom gravy generously over each serving to enhance moisture and flavor.

Notes

  • Choose ground beef with some fat content (80/20) for a tender meatloaf.
  • Do not overmix the meat to avoid a dense texture.
  • Allow the meatloaf to rest after baking to keep it juicy.
  • Use fresh mushrooms for the best texture and flavor in the gravy.
  • Prepare the mushroom gravy while the meatloaf bakes to serve it warm and fresh.
