Scale

Main Ingredients

  • 4 flour tortillas (use gluten-free tortillas for gluten-free option)
  • 2 cups fresh spinach, washed and finely chopped
  • 1 cup crumbled feta cheese
  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup Kalamata olives, chopped
  • ½ cup cream cheese or Greek yogurt
  • 1 tsp fresh oregano or ½ tsp dried Mediterranean herbs
  • ½ tsp garlic powder
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Prepare the Filling: Wash the fresh spinach thoroughly, then chop it finely. In a mixing bowl, combine the spinach with crumbled feta, cream cheese (or Greek yogurt), chopped sun-dried tomatoes, diced Kalamata olives, garlic powder, lemon juice, and herbs. Mix well until the filling is creamy and flavorful.
  2. Spread the Filling: Lay out the flour tortillas on a clean surface. Using a spatula or butter knife, spread an even layer of the spinach and feta mixture across each tortilla, leaving about half an inch from the edges to prevent filling from oozing out.
  3. Roll Them Up Tightly: Gently but firmly roll each tortilla tightly from one edge to the other. Tighter rolls help the pinwheels keep their shape when sliced.
  4. Chill for Best Results: Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes. This step sets the filling and makes slicing easier and neater.
  5. Slice and Serve: After chilling, unwrap the rolls and slice each into 1- to 1.5-inch thick pinwheels using a sharp knife. Arrange on a serving platter and enjoy immediately or keep refrigerated until ready to serve.

Notes

  • Use fresh spinach and herbs for vibrant color and flavor.
  • Don’t overfill the tortillas to prevent tearing or messy rolling.
  • Chill the rolls before slicing for cleaner, intact pinwheel shapes.
  • Use a sharp serrated or chef’s knife to slice smoothly without crushing.
  • For extra texture, add finely chopped cucumbers or toasted pine nuts to the filling.
