Ingredients

Scale

Cheesecake Batter

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or heavy cream

Cinnamon Swirl

  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, melted
  • 1 tablespoon all-purpose flour

Crust (Optional)

  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter

Instructions

  1. Prepare your pans and crust: Preheat your oven to 325°F (160°C). If using a crust, mix graham cracker crumbs with melted butter and press into the bottom of each muffin cup to form a crunchy base. Skip this step if no crust is desired.
  2. Make the cheesecake batter: In a mixing bowl, beat softened cream cheese until smooth and creamy. Gradually add sugar, then mix in eggs one at a time. Stir in vanilla extract and milk or heavy cream to keep the batter silky and moist.
  3. Prepare the cinnamon swirl: Combine brown sugar, cinnamon, melted butter, and flour until a thick paste forms. This mixture will create the signature cinnamon swirl topping.
  4. Assemble the Mini Cinnamon Roll Cheesecakes: Fill each muffin cup about two-thirds full with cheesecake batter. Add dollops of the cinnamon swirl mixture on top. Use a toothpick or knife to gently swirl the cinnamon topping into the batter, creating a beautiful cinnamon roll pattern.
  5. Bake and cool: Bake the mini cheesecakes for 18-22 minutes or until the edges are set but the center still slightly jiggles. Remove from oven and let cool completely in the pan. Then transfer to the refrigerator for at least 2 hours to chill and set fully before serving.

Notes

  • Use room temperature cream cheese for a smooth batter without lumps.
  • Do not overmix the batter to prevent cracking during baking.
  • For extra creamy texture, bake the pan in a water bath.
  • Swirl the cinnamon topping gently to keep it distinct.
  • Chill thoroughly before serving to make slicing and serving easier.
