Ingredients

Scale

For the Crust

  • 1/2 cup (113g) butter, softened
  • 1/3 cup (67g) sugar
  • 1 large egg
  • 1 1/4 cups (150g) all-purpose flour

For the Filling

  • 8 oz (227g) cream cheese, softened
  • 1/4 cup (50g) sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

For the Topping

  • 23 ripe peaches, peeled and thinly sliced

Instructions

  1. Prepare the crust: Combine softened butter, sugar, and an egg in a bowl, mixing until creamy. Gradually add the all-purpose flour and mix until a smooth dough forms. Wrap the dough in plastic wrap and chill for at least 30 minutes to make it easier to handle.
  2. Make the cream cheese filling: In a separate bowl, beat softened cream cheese with sugar, vanilla extract, and lemon juice until silky and smooth. The lemon juice brightens the flavor and prevents browning.
  3. Slice the peaches: Wash, peel, and thinly slice the ripe peaches. Thin slices ensure even baking and tender texture without excess juice release.
  4. Assemble the tarts: Roll out the chilled dough to about 1/8 inch thickness and cut into small circles or press into mini tart pans. Spoon cream cheese filling evenly into each crust, then arrange peach slices artfully on top, slightly overlapping for visual appeal and even baking.
  5. Bake to perfection: Preheat oven to 350°F (175°C). Bake the tarts for 20-25 minutes or until the crust is golden and the filling is fully set. Allow tarts to cool slightly before serving for optimal texture and flavor.

Notes

  • Use room temperature ingredients: Softer butter and cream cheese blend better for smoother textures.
  • Chill the dough thoroughly to prevent shrinkage and keep the crust tender.
  • Handle peaches gently to avoid crushing slices and releasing excess juice, which can make the crust soggy.
  • For a glossy finish, brush the crust edges with an egg wash before baking.
  • Do not overcrowd peach slices; keep them slightly overlapping for even baking and attractive presentation.
