Instructions

  2. Toss Ingredients in Olive Oil and Seasonings: In a large bowl, combine the diced potatoes, sliced bell peppers, and minced garlic. Drizzle with olive oil, then sprinkle with salt, black pepper, dried oregano, and thyme. Toss everything thoroughly until evenly coated.
  3. Arrange on a Baking Sheet: Spread the seasoned vegetables in an even layer on a large rimmed baking sheet. Nestle the sausages among the vegetables, making sure nothing is overcrowded to allow proper roasting and caramelization.
