Base Ingredients
- 1 cup strong brewed coffee (freshly brewed or cold brew, cooled)
- 1 cup full-fat coconut milk
- 2–3 tablespoons raw honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 pinch cinnamon (optional)
- 1 pinch sea salt
- Step 1: Brew Your Coffee. Prepare strong coffee using your preferred method—whether drip, French press, or cold brew. Allow it to cool completely to avoid ice crystal formation and ensure a smooth texture in your popsicles.
- Step 2: Combine the Ingredients. In a mixing bowl or jug, whisk together the cooled coffee, coconut milk, vanilla extract, your choice of sweetener, cinnamon (if using), and a pinch of sea salt until the mixture is smooth and well blended.
- Step 3: Pour into Popsicle Molds. Carefully pour the mixture into popsicle molds, leaving a small gap at the top to allow for expansion during freezing.
- Step 4: Freeze Until Solid. Place the molds in the freezer for at least 4 to 6 hours, or overnight, to ensure the popsicles are completely frozen.
- Step 5: Unmold and Serve. To easily remove the popsicles, run warm water over the mold exteriors for a few seconds, then gently pull out each popsicle. Serve immediately for the best flavor and texture.
Notes
- Use strong coffee for a more pronounced flavor after freezing.
- Chill the mixture before pouring to prevent frost buildup and maintain creaminess.
- Optionally, add a small amount of gelatin or arrowroot powder to enhance creaminess.
- Adjust sweetness to your preference, since freezing can reduce perceived sweetness.
- Use flexible silicone molds for easier unmolding and less breakage.
