Instructions

  1. Prepare the Peppers and Onions: Heat olive oil in a skillet over medium heat. Add chopped bell peppers and diced onions, cooking for about 5-7 minutes until they are soft and slightly caramelized to enhance their sweetness and flavor.
  2. Mix the Meatloaf Ingredients: In a large bowl, combine the ground beef, sautéed peppers and onions (cooled slightly), egg, breadcrumbs, Worcestershire sauce, salt, and black pepper. Gently mix until all ingredients are evenly incorporated, but avoid overmixing.
  3. Shape the Meatloaf: Transfer the meat mixture to a parchment-lined baking sheet or loaf pan. Shape it into a compact loaf approximately 8 inches long and 4 inches wide for even cooking.
  4. Add the Cheese: Place 4 slices of provolone cheese on top of the shaped loaf, pressing gently. Reserve the remaining 2 slices for melting on top after baking.
  5. Bake: Preheat the oven to 375°F (190°C). Bake the meatloaf for 35-40 minutes until cooked through and the internal temperature reaches 160°F (71°C).
  6. Melt the Remaining Cheese: Remove the meatloaf from the oven and immediately top with the remaining 2 slices of provolone. Return to the oven for 3-5 minutes until the cheese melts completely.
  7. Rest and Slice: Allow the meatloaf to rest for 5-10 minutes before slicing to retain juices and ensure tender, juicy pieces.
