Instructions

  1. Prepare the Cake Batter: Preheat oven to 350°F (175°C) and grease two 8-inch round cake pans. In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time. Gradually fold in the dry ingredients: all-purpose flour, baking powder, salt, and pistachio paste or ground pistachios. Add vanilla extract and mix until combined, taking care not to overmix.
  2. Bake the Cake Layers: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow cakes to cool completely on a wire rack before assembling.
  3. Make the Mascarpone Frosting: In a chilled bowl, whip the mascarpone cheese and heavy cream together with sugar until soft peaks form. Be careful not to over-whip to avoid a grainy texture. The frosting should be creamy and spreadable.
  4. Assemble the Cake: Place one cake layer on a serving plate and spread a generous amount of mascarpone frosting over the top. Repeat with the remaining layers.
