Ingredients

Crust

  • Digestive biscuits or graham crackers – 150g, crushed
  • Butter – 75g, melted
  • Toasted pistachios – 30g, finely chopped

Cheesecake Filling

  • Cream cheese – 400g, softened
  • Sugar – 100g
  • Whipping cream – 150ml, whipped
  • Ground pistachios – 50g
  • Gelatin or agar-agar – 10g (about 1 tablespoon), dissolved as per instructions

Filling Surprise

  • Fresh raspberries – 50g or raspberry jam – 3 tablespoons

Decoration

  • Toasted pistachios – 20g, chopped
  • Fresh raspberries or raspberry sauce – as desired

Instructions

  1. Prepare the Crust: Crush digestive biscuits or graham crackers into fine crumbs. Mix with melted butter and finely chopped toasted pistachios. Press this mixture evenly into the bottom of silicone dome molds or mini bowls to form a firm base. Refrigerate to chill while preparing the filling.
  2. Make the Pistachio Cheesecake Filling: Whip softened cream cheese and sugar together until smooth and fluffy. Gradually fold in whipped cream to add lightness. Gently mix in ground pistachios along with dissolved gelatin or agar-agar to ensure the filling holds its shape. The mixture should be silky yet firm.
  3. Assemble the Domes: Spoon a layer of cheesecake filling over the chilled crust in each mold. Add a dollop of raspberry jam or a few fresh raspberries in the center as a hidden surprise. Cover with additional cheesecake filling, smoothing the top evenly. Refrigerate for several hours, preferably overnight, until fully set.
  4. Unmold and Decorate: Carefully pop each dome out of its mold once set. Sprinkle with chopped toasted pistachios and garnish with a fresh raspberry or drizzle raspberry sauce on top. Serve chilled for optimal texture and flavor.
