Ingredients

Scale

Main Ingredients

  • 4 cups Russet potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cream or milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Optional Ingredients

  • 4 strips bacon or ½ cup diced ham, cooked and chopped (optional)
  • Fresh herbs (chives, parsley, thyme) for garnish

Instructions

  1. Prep Your Ingredients: Peel and chop the potatoes into bite-sized cubes. Finely chop the onions and garlic. Measure out your broth and dairy ingredients to have everything ready for cooking.
  2. Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onions and garlic and sauté until translucent and fragrant, building a rich flavor base for the soup.
  3. Cook the Potatoes: Add the diced potatoes to the pot and pour in the broth just enough to cover them. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender and easily mashed.
  4. Blend or Mash the Soup: Use an immersion blender to partially puree the soup, leaving some chunks for texture, or mash with a potato masher for a heartier consistency.
  5. Add Cream and Seasonings: Stir in the cream or milk and season with salt and pepper. Heat through gently without boiling to maintain a velvety texture, adjusting the seasoning to your taste.
  6. Garnish and Serve: Top the soup with fresh herbs, crispy bacon, shredded cheese, or other desired toppings before serving for added flavor and presentation.

Notes

  • Use Russet or Yukon Gold potatoes for the best creamy texture.
  • Do not overblend the soup to keep a pleasing texture with chunks.
  • Season gradually with salt and taste as you go to avoid overseasoning.
  • Use fresh, high-quality broth for deeper flavor.
  • Add fresh herbs right before serving for vibrant, fresh taste.
